Ceremonial Grade – Single Origin
ISE Matcha
Mie Prefecture, Japan
A rare and exceptional matcha sourced exclusively from the misty tea fields of Mie Prefecture, one of Japan’s most renowned yet lesser-known matcha-growing regions. Located near Ise Bay, the area benefits from humid, foggy mornings and mineral-rich volcanic soil, creating the ideal terroir for cultivating premium tea.
Only the youngest, hand-picked first-flush leaves are selected, then carefully shade- grown to enhance chlorophyll and amino acid content, producing a deep emerald hue and a naturally sweet, umami-rich profile. Using traditional stone-milling, these delicate leaves are transformed into an ultra-fine powder, preserving aroma, nutrients, and a silky texture.
The result is a matcha of remarkable harmony and depth, revealing delicate notes
of white blossoms, natural sweetness, and a smooth, lingering finish. This single- origin approach ensures purity and authenticity—capturing the true character of Ise’s unique climate and soil in every sip.
Purity of place. Taste of ancient tradition.
The Value of Single-Origin Matcha
Single-origin matcha comes from a specific region or even a single tea estate, rather than being blended from multiple sources. This approach captures the unique characteristics (terroir) of the growing environment—including climate, soil composition, and cultivation techniques—offering a distinctive flavor profile that reflects its place of origin.
In the case of Ise Matcha from Mie Prefecture, the foggy mornings, mineral-rich volcanic soil, and proximity to Ise Bay create an environment ideal for producing vibrant, umami-rich tea leaves. Unlike blended matcha, which aims for uniform taste across batches, single-origin matcha celebrates natural variations, delivering an authentic expression of the harvest and the specific growing area.
SUZUME LTD
The key to matcha’s unique flavor lies in shade-growing. Approximately 3 to 4 weeks before harvest, the tea plants are covered to reduce sunlight exposure, which enhances chlorophyll and amino acids (specifically L-theanine), resulting in matcha’s signature vibrant green color and umami taste.
