Takaki no Ippon- Funa-Shibori Junmai Daiginjo
Origin
The pinnacle of Shirataki Brewery’s craftsmanship from Echigo-Yuzawa, the snow-covered town immortalized in the novel Snow Country by renowned Japanese author and Nobel Prize winner Yasunari Kawabata. The sake takes its name from Takaki, the brewery’s toji and a native of Echigo-Yuzawa, reflecting the knowledge, precision, and dedication of a master who has devoted his life to the art of sake brewing.
Sensory Profile
Rich yet refined aromas lead to a smooth, polished palate with an almost silky texture. Made using the traditional Funa-Shibori method, in which the moromi is placed into individual cloth bags and slowly and gently pressed inside a traditional fune sake press. This delicate pressing technique gives the sake exceptional finesse, depth, and elegance.
Only 320 bottles are produced once a year and sold exclusively in Echigo-Yuzawa. A rare sake that connects place, tradition, and craftsmanship—the most personal and prestigious expression of Shirataki.
